Instructions
- Prepare raspberries: Roughly chop the frozen raspberries and evenly distribute them into the popsicle molds to ensure each popsicle has a good amount of fruit.
- Mix lemon sweetener: In a bowl, whisk together the lemon juice, water, and stevia until well combined. Taste and adjust the sweetness as desired by adding more stevia if needed.
- Assemble popsicles: Pour the lemon and stevia mixture over the raspberries in each mold, making sure the liquid covers the fruit evenly.
- Insert sticks and secure: Place sticks into each popsicle mold and properly secure the lids to hold everything in place during freezing.
- Freeze: Place the molds in the freezer and freeze for at least 4 hours or preferably overnight until the popsicles are completely solid.
- Serve: Carefully remove the popsicles from the molds by running warm water over the outside for a few seconds if needed, then enjoy your refreshing keto-friendly treat.
