Description

These 3-Ingredient Keto Raspberry Lemon Popsicles are a refreshing and healthy frozen treat, perfect for hot days or a light dessert. Combining tart lemon juice, sweetened with stevia, and fresh frozen raspberries, these popsicles are easy to make, sugar-free, and perfectly keto-friendly.

Ingredients

Scale

Ingredients

  • 1 cup lemon juice
  • 2 cups water
  • 3 to 5 doonks of stevia (to taste)
  • 1/2 cup frozen raspberries, roughly chopped

Instructions

  1. Prepare raspberries: Roughly chop the frozen raspberries and evenly distribute them into the popsicle molds to ensure each popsicle has a good amount of fruit.
  2. Mix lemon sweetener: In a bowl, whisk together the lemon juice, water, and stevia until well combined. Taste and adjust the sweetness as desired by adding more stevia if needed.
  3. Assemble popsicles: Pour the lemon and stevia mixture over the raspberries in each mold, making sure the liquid covers the fruit evenly.
  4. Insert sticks and secure: Place sticks into each popsicle mold and properly secure the lids to hold everything in place during freezing.
  5. Freeze: Place the molds in the freezer and freeze for at least 4 hours or preferably overnight until the popsicles are completely solid.
  6. Serve: Carefully remove the popsicles from the molds by running warm water over the outside for a few seconds if needed, then enjoy your refreshing keto-friendly treat.

Notes

  • Adjust the sweetness by adding more or less stevia according to your taste preference.
  • Using fresh or frozen raspberries is fine; frozen raspberries help keep the popsicles evenly chilled.
  • To easily remove popsicles, briefly warm the mold edges under warm water.
  • These popsicles are keto-friendly and perfect for low-carb diets.
  • For variety, try adding mint leaves or other low-carb berries.
