Ingredients
Scale
Filling
- 1 can Pinto beans (14-16 ounces)
- 1 small onion, chopped
- 1 tablespoon taco sauce
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- Garlic salt, to taste
- Pepper, to taste
- 1 teaspoon brown sugar
- Cheddar Jack cheese, shredded (about 1 cup)
Wraps
- 5-6 Flour Tortillas
Instructions
- Prepare the filling: In a bowl, mash the pinto beans roughly or leave slightly chunky. Add the chopped onion, taco sauce, chili powder, ground cumin, garlic salt, pepper, and brown sugar. Mix well to combine all the flavors evenly.
- Add cheese: Stir in the shredded Cheddar Jack cheese into the bean mixture until well distributed.
- Fill the tortillas: Lay a flour tortilla flat and spoon about 2-3 tablespoons of the filling near one edge. Roll the tortilla tightly into a cigar shape and secure with a toothpick if needed. Repeat for all tortillas.
- Preheat the air fryer: Set your air fryer to 375°F (190°C) and let it preheat for 3-5 minutes.
- Cook the taquitos: Place the rolled taquitos seam side down in the air fryer basket in a single layer, spacing them slightly apart. Air fry for 8-10 minutes, turning halfway through, until they are golden brown and crispy.
- Serve: Remove the taquitos from the air fryer and let cool slightly before serving. Enjoy with salsa, guacamole, or sour cream if desired.
Notes
- If you want extra crispy taquitos, lightly brush or spray the tortillas with oil before air frying.
- You can substitute corn tortillas for a gluten-free version.
- Adjust the seasoning to your taste, adding more chili powder for extra heat.
- Use leftover chicken or beef instead of beans for a non-vegetarian option.
- Be careful not to overcrowd the air fryer basket to ensure even cooking.
