Ingredients
Scale
Potatoes
- 1 ½ lbs. red potatoes (quartered)
Seasoning & Sauce
- 2 Tbsp. oil (avocado or olive)
- 1 Tbsp. lemon juice (freshly squeezed)
- 1 tsp. lemon zest
- 2 cloves garlic (finely minced)
- 1 ¼ tsp. salt (to taste)
- ½ tsp. black pepper (to taste)
Cheese & Garnish
- ¼ cup + 2 Tbsp. Parmesan cheese (grated, divided)
- 1 Tbsp. parsley (finely chopped)
Instructions
- Preheat the air fryer: Set your 6-quart air fryer to 400°F (200°C) and allow it to preheat while you prepare the potatoes, ensuring an even cooking temperature for crispy results.
- Prepare the potatoes: Cut small red potatoes into quarters or larger potatoes into 1-inch chunks to ensure uniform cooking and optimal crispness when air fried.
- Mix the marinade: In a large bowl, whisk together the avocado or olive oil, freshly squeezed lemon juice, lemon zest, finely minced garlic, salt, and black pepper until well combined to create a flavorful coating for the potatoes.
- Coat the potatoes: Add the cut potatoes to the bowl and toss thoroughly to ensure each piece is evenly coated with the lemon-garlic marinade.
- Add the Parmesan cheese: Sprinkle ¼ cup of grated Parmesan cheese over the potatoes and toss again until all pieces are covered, which adds a savory, cheesy crust when air fried.
- Air fry the potatoes: Spread the potatoes in a single layer in the preheated air fryer basket. Cook at 400°F for 14-15 minutes, flipping the potatoes halfway through to achieve golden brown and crispy edges on all sides.
- Serve and garnish: Transfer the roasted potatoes to a serving dish and sprinkle with the remaining 2 tablespoons of Parmesan cheese and finely chopped parsley for a fresh and flavorful finish. Enjoy warm.
Notes
- Use red potatoes for their firm texture and ability to crisp up nicely in the air fryer.
- Cut potatoes uniformly to ensure even cooking.
- Tossing the potatoes in Parmesan before air frying helps create a crispy, flavorful coating.
- Flipping the potatoes halfway through cooking ensures even crisping on all sides.
- If you don’t have an air fryer, these can also be roasted in the oven at 425°F for about 25-30 minutes, flipping halfway.
- For a dairy-free version, omit the Parmesan cheese or substitute with a vegan cheese alternative.
- Adjust seasoning according to taste preference; more lemon juice can add extra brightness.
