Potatoes
- 1 lb Yukon gold potatoes, cut into bite-size pieces about 1/2” – 3/4” thick, skin-on, scrubbed
Seasonings
- 1 ½ Tbsp extra virgin olive oil
- ½ tsp fine sea salt (or to taste)
- ½ tsp Italian seasoning
- ½ tsp garlic powder
- ¼ tsp freshly ground black pepper (or to taste)
Garnish
- 1 Tbsp parsley, finely chopped (optional)
Instructions
- Prepare the Potatoes: Cut the Yukon gold potatoes into bite-sized pieces about 1/2” to 3/4” thick. Place them in a medium mixing bowl. Drizzle with the extra virgin olive oil and sprinkle with salt, Italian seasoning, garlic powder, and freshly ground black pepper. Toss everything together to ensure the potatoes are evenly coated with the oil and seasonings.
- Air Fry the Potatoes: Transfer the seasoned potatoes into your air fryer basket, spreading them out in a single layer to ensure even cooking. Set the air fryer to 400˚F and cook for 18-20 minutes. Halfway through the cooking time, flip and toss the potatoes to promote uniform browning and crispiness. Continue cooking until the potatoes are golden brown on the outside and tender when pierced with a fork.
- Garnish and Serve: Once cooked, transfer the potatoes to a serving dish, garnish with finely chopped parsley if desired, and serve immediately while warm and crispy.
