Scale
Vegetables and Fruits
- 4 cups green cabbage, thinly sliced (or a coleslaw mix)
- 1 large apple (Granny Smith or Honeycrisp), julienned or thinly sliced
- 1/2 cup dried cranberries
- 2 green onions, thinly sliced (optional)
- 1/4 cup fresh parsley, chopped (optional)
Nuts and Seeds
- 1/4 cup sliced almonds or sunflower seeds (optional, for crunch)
- 1/2 teaspoon celery seeds (optional)
Dressing
- 1/2 cup mayonnaise (or Greek yogurt for a lighter option)
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey or maple syrup
- 1 tablespoon Dijon mustard
- Salt and freshly ground black pepper, to taste
Instructions
- Prepare the Salad: In a large mixing bowl, combine the thinly sliced cabbage, julienned or thinly sliced apple, dried cranberries, sliced almonds or sunflower seeds if using, green onions, and chopped fresh parsley to create the base of the coleslaw.
- Make the Dressing: In a small bowl, whisk together the mayonnaise or Greek yogurt, apple cider vinegar, honey or maple syrup, Dijon mustard, celery seeds if using, and salt and pepper to taste. Adjust sweetness and seasoning to your preference for a balanced flavor.
- Toss the Coleslaw: Pour the prepared dressing over the coleslaw mixture, then toss thoroughly until all the cabbage and apples are well coated with the creamy dressing.
- Chill and Serve: Transfer the coleslaw to the refrigerator and let it chill for at least 30 minutes. This resting time allows the flavors to meld perfectly. Serve cold as a refreshing side dish or snack.
Notes
- For a lighter version, substitute mayonnaise with Greek yogurt.
- Adjust the sweetness with honey or maple syrup according to your taste.
- Optional ingredients like sliced almonds or sunflower seeds add crunch and texture.
- Celery seeds contribute a subtle aromatic flavor but can be omitted if unavailable.
- Allowing the coleslaw to chill improves the flavor integration and crispness.
