Bagel:
- 2 bagels sliced in half
Tuna Avocado Mixture:
- 1 can (5 ounces) tuna, drained
- 1 ripe avocado, mashed
- 2 tablespoons mayonnaise or Greek yogurt
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/4 cup red onion, finely diced
- 1/4 cup celery, finely diced
Additional Toppings:
- 4 slices tomato
- 4 slices cheddar or provolone cheese
- 1 tablespoon butter, softened
Instructions
- Preheat the oven broiler. In a medium bowl, mix together tuna, mashed avocado, mayonnaise, Dijon mustard, lemon juice, garlic powder, black pepper, salt, red onion, and celery until well combined.
- Arrange bagel halves on a baking sheet and lightly butter the cut sides. Broil for 1 to 2 minutes until lightly toasted.
- Remove from the oven and spread the tuna avocado mixture evenly over each bagel half. Top with a tomato slice and a slice of cheese.
- Return under the broiler for 2 to 3 minutes, or until the cheese is melted and bubbly. Serve warm.
Notes
- Everything bagels work especially well for extra flavor.
- For a lighter option, use reduced-fat cheese or skip the butter on the bagels.
