Description

Bagel:

  • 2 bagels sliced in half

Tuna Avocado Mixture:

  • 1 can (5 ounces) tuna, drained
  • 1 ripe avocado, mashed
  • 2 tablespoons mayonnaise or Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup red onion, finely diced
  • 1/4 cup celery, finely diced

Additional Toppings:

  • 4 slices tomato
  • 4 slices cheddar or provolone cheese
  • 1 tablespoon butter, softened

Instructions

  1. Preheat the oven broiler. In a medium bowl, mix together tuna, mashed avocado, mayonnaise, Dijon mustard, lemon juice, garlic powder, black pepper, salt, red onion, and celery until well combined.
  2. Arrange bagel halves on a baking sheet and lightly butter the cut sides. Broil for 1 to 2 minutes until lightly toasted.
  3. Remove from the oven and spread the tuna avocado mixture evenly over each bagel half. Top with a tomato slice and a slice of cheese.
  4. Return under the broiler for 2 to 3 minutes, or until the cheese is melted and bubbly. Serve warm.

Notes

  • Everything bagels work especially well for extra flavor.
  • For a lighter option, use reduced-fat cheese or skip the butter on the bagels.
