Description

These Baked Blueberry Donuts are a delightful treat featuring tender, moist donuts bursting with fresh blueberries. Perfect for a quick breakfast or an afternoon snack, these donuts are easy to make with simple pantry ingredients and baked to perfection, offering a healthier alternative to fried donuts.

Ingredients

Scale

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt

Wet Ingredients

  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 large egg
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract

Additional

  • 1/2 cup fresh or frozen blueberries

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a donut pan or spray it with non-stick cooking spray to prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
  3. Combine Wet Ingredients: In a separate bowl, mix the milk, sour cream, egg, melted unsalted butter, and vanilla extract until the mixture is smooth and homogenous.
  4. Combine Wet and Dry Mixtures: Pour the wet ingredients into the bowl with the dry ingredients and gently stir until just combined. Be careful not to overmix to avoid tough donuts.
  5. Fold in Blueberries: Carefully fold in the fresh or frozen blueberries evenly throughout the batter, maintaining their shape.
  6. Fill Donut Pan: Spoon the batter into the greased donut pan cavities, filling each about two-thirds full to allow room for rising.
  7. Bake: Bake in the preheated oven for 12 to 15 minutes or until the donuts spring back when lightly touched and a toothpick inserted into the center comes out clean.
  8. Cool: Let the donuts cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely before serving.

Notes

  • Use fresh blueberries for the best texture, but frozen blueberries work well too—no need to thaw before adding.
  • Do not overmix the batter to keep the donuts light and fluffy.
  • If you don’t have a donut pan, cupcake pans can be used as an alternative.
  • Store the donuts in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
  • To reheat, warm in the oven or microwave briefly to enjoy a freshly baked taste.
