  • 3 cups cooked and shredded chicken breast
  • 4 cups riced cauliflower (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • 1/2 cup plain Greek yogurt
  • 1/2 cup BBQ sauce
  • 1/4 cup diced red onion
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste
  • Chopped green onions or parsley for garnish


Instructions

  1. Preheat oven to 375°F (190°C). If using frozen cauliflower rice, microwave it for a few minutes until tender and remove excess moisture with a towel.
  2. In a large mixing bowl, combine the shredded chicken, cauliflower rice, 3/4 cup cheddar cheese, Greek yogurt, BBQ sauce, red onion, garlic powder, smoked paprika, salt, and pepper. Stir until everything is well mixed.
  3. Transfer the mixture to a greased 9×13-inch baking dish. Sprinkle the remaining 1/4 cup cheese over the top.
  4. Bake for 20–25 minutes until hot and bubbly. Remove from oven and let it rest for 5 minutes. Garnish with green onions or parsley before serving.

Notes

  • Use a sugar-free BBQ sauce for a lower-carb version.
  • You can substitute sour cream for Greek yogurt if preferred.
  • Add a sprinkle of red pepper flakes for heat.
