- 3 cups cooked and shredded chicken breast
- 4 cups riced cauliflower (fresh or frozen)
- 1 cup shredded cheddar cheese
- 1/2 cup plain Greek yogurt
- 1/2 cup BBQ sauce
- 1/4 cup diced red onion
- 1/4 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- Salt and pepper to taste
- Chopped green onions or parsley for garnish
Instructions
- Preheat oven to 375°F (190°C). If using frozen cauliflower rice, microwave it for a few minutes until tender and remove excess moisture with a towel.
- In a large mixing bowl, combine the shredded chicken, cauliflower rice, 3/4 cup cheddar cheese, Greek yogurt, BBQ sauce, red onion, garlic powder, smoked paprika, salt, and pepper. Stir until everything is well mixed.
- Transfer the mixture to a greased 9×13-inch baking dish. Sprinkle the remaining 1/4 cup cheese over the top.
- Bake for 20–25 minutes until hot and bubbly. Remove from oven and let it rest for 5 minutes. Garnish with green onions or parsley before serving.

- Use a sugar-free BBQ sauce for a lower-carb version.
- You can substitute sour cream for Greek yogurt if preferred.
- Add a sprinkle of red pepper flakes for heat.
