Description

This BBQ Chicken Potato Skillet is a hearty and flavorful one-pan meal combining tender, seasoned chicken with crispy golden potatoes, smothered in tangy barbecue sauce and melted cheddar cheese. Garnished with fresh green onions and cilantro, it’s perfect for an easy weeknight dinner or casual get-together.

Ingredients

Scale

Chicken and Seasonings

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme

Potatoes and Sauce

  • 2 large russet potatoes, cubed
  • 1 cup barbecue sauce

Toppings

  • 1 cup shredded cheddar cheese
  • 2 green onions, sliced
  • 1 tablespoon chopped fresh cilantro (optional)

Instructions

  1. Heat the Oil: Heat the olive oil in a large skillet over medium-high heat to prepare for cooking the chicken.
  2. Season the Chicken: Add the chicken pieces to the hot skillet and season evenly with salt, black pepper, garlic powder, smoked paprika, onion powder, and dried thyme. Stir to coat all pieces well.
  3. Cook the Chicken: Sauté the chicken for 5-7 minutes until browned and cooked through. Then, remove the chicken from the skillet and set it aside to keep warm.
  4. Cook the Potatoes: In the same skillet, add the cubed potatoes. Cook them for 10-12 minutes, stirring occasionally, until they are golden brown and tender.
  5. Combine Chicken and Potatoes: Reduce heat to medium and return the cooked chicken to the skillet with the potatoes.
  6. Add Barbecue Sauce: Pour the barbecue sauce over the chicken and potatoes, stirring to mix everything evenly.
  7. Melt the Cheese: Sprinkle shredded cheddar cheese on top, cover the skillet, and cook for 3-5 minutes until the cheese is melted and bubbly.
  8. Garnish: Remove the skillet from heat and sprinkle the sliced green onions and chopped cilantro over the top for a fresh finish.
  9. Serve: Serve the BBQ chicken and potatoes hot as a filling main dish suitable for family dinners or casual gatherings.

Notes

  • For extra crispiness, parboil potatoes for 5 minutes before cubing and cooking.
  • Use your favorite barbecue sauce to customize the flavor profile.
  • Optional cilantro adds a fresh, herbaceous note but can be omitted if preferred.
  • Make sure chicken is fully cooked through to an internal temperature of 165°F (74°C).
  • This recipe can be doubled for larger groups using a larger skillet.
