Description

This BBQ Chicken Sweet Potato Bowl is a wholesome and flavorful meal combining tender, smoky barbecue chicken with perfectly roasted sweet potatoes. It’s a quick and easy recipe ideal for a nutritious weeknight dinner that brings together smoky, savory, and slightly sweet flavors, finished with fresh herbs for a bright touch.

Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts, cubed
  • 1-2 tablespoons olive oil (for cooking chicken)
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 cup barbecue sauce of choice

Sweet Potatoes

  • 2 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste

Garnish

  • Fresh parsley or cilantro, chopped, for garnish

Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C) to prepare for roasting the sweet potatoes, ensuring a crispy outside and tender inside.
  2. Prepare sweet potatoes: Peel and cube the sweet potatoes evenly. Toss them in olive oil, smoked paprika, garlic powder, salt, and black pepper until all pieces are well coated.
  3. Roast sweet potatoes: Spread the seasoned sweet potato cubes in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, flipping halfway through to ensure even cooking and browning.
  4. Cook chicken: While the sweet potatoes roast, cube the chicken breasts. Season with salt and black pepper. Heat olive oil in a skillet over medium-high heat, then add the chicken cubes. Cook the chicken until golden brown and cooked through, about 6-8 minutes.
  5. Add barbecue sauce: Reduce the heat to medium-low and stir in the barbecue sauce with the cooked chicken. Let it simmer for 2-3 minutes so the chicken absorbs the sauce’s flavors and becomes nicely glazed.
  6. Assemble the bowl: Combine the roasted sweet potatoes and barbecue chicken in serving bowls. Garnish with freshly chopped parsley or cilantro for a burst of color and freshness. Serve immediately while warm.

Notes

  • You can use any barbecue sauce you prefer, whether sweet, spicy, or smoky, to customize the flavor.
  • For extra crispiness on sweet potatoes, spread them out without crowding on the baking sheet.
  • To make this dish gluten-free, ensure your barbecue sauce is gluten-free certified.
  • Leftover ingredients can be stored separately and reheated for quick meal prep.
