Instructions
- Prepare Slow Cooker: Add stew beef, chopped onion, minced garlic, birria seasoning packet, and beef stock to the slow cooker.
- Slow Cook Beef: Cook on low for 4 to 6 hours until the beef is tender enough to shred easily.
- Preheat Oven: Set your oven to 350°F (175°C) to get ready for baking the sliders.
- Prepare Rolls: Slice the Hawaiian rolls in half horizontally and place the bottom halves evenly in a 9×13 inch baking dish.
- Add Cheese: Place slices of Colby Jack cheese over the bottom halves of the rolls.
- Add Beef and Toppings: Distribute shredded beef over the cheese, then add optional toppings such as cilantro, red onion, or jalapeño slices. Cover with the top halves of the rolls.
- Make Garlic Butter: In a microwave-safe bowl, melt butter in 30 second intervals and stir in garlic salt and chopped parsley or cilantro.
- Brush Rolls: Generously brush the garlic butter mixture over the tops of the rolls.
- Bake Sliders: Place the baking dish in the oven and bake for 12-15 minutes until the cheese has melted and the tops are golden and buttery.
- Serve: Serve hot with reserved cooking liquid from the slow cooker on the side for dipping, and lime wedges for squeezing over the sliders.
Notes
- Cooking time can vary; check the beef tenderness before shredding.
- Reserve the cooking liquid to use as a flavorful dip (consommé).
- Customize toppings to your taste with additional jalapeños or pickled onions.
- If you prefer, you can use different types of cheese, such as mozzarella or Oaxaca, for a meltier texture.
- Butter can be substituted with olive oil for a different flavor and lower saturated fat content.
