Description

Boursin Chicken is a creamy, flavorful dish featuring tender chicken breasts cooked in a rich sauce made with Boursin Fine Herbs & Garlic cheese, chicken broth, and sautéed onions. This quick and easy skillet recipe is perfect for a delicious weeknight dinner, offering a savory blend of herbs and garlic that complements the juicy chicken perfectly.

  • 2 large chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste)
  • 1 tablespoon olive oil
  • 1 tablespoon butter

Sauce

  • 1/2 medium onion, chopped
  • 3/4 cup chicken broth (use low sodium if sensitive to salt)
  • 1 (5.2 oz) package Boursin Fine Herbs & Garlic cheese (softened)
  • 1-2 tablespoons chopped parsley (optional)


Instructions

  1. Prepare Chicken: Cut the chicken breasts in half lengthwise to create 4 thinner pieces. Season both sides with garlic powder and salt & pepper to taste.
  2. Cook Chicken: Heat olive oil and butter in a skillet over medium-high heat until hot. Add the chicken pieces and cook for 5-6 minutes on each side, or until fully cooked through. Remove chicken from skillet and set aside on a plate.
  3. Sauté Onions: Add the chopped onions to the skillet and sauté for about 5 minutes, or until softened and lightly browned. If the pan becomes dry, add a small splash more olive oil to prevent sticking.
  4. Make Sauce: Pour in the chicken broth and add the softened Boursin cheese to the skillet. Stir continuously until the cheese melts and forms a smooth sauce. Let it simmer and bubble gently for 5 minutes. Optionally, stir in chopped parsley for freshness.
  5. Combine Chicken and Sauce: Return the cooked chicken and any juices from the plate back into the skillet. Let the chicken warm through for 2 minutes, allowing the sauce to thicken further. If the sauce becomes too thick, add a small splash of chicken broth to reach desired consistency.
  6. Season and Serve: Taste the sauce and add additional salt and pepper if needed (note that regular chicken broth may already add enough salt). Serve the chicken immediately with the creamy Boursin sauce poured over.

  • To keep the chicken moist, do not overcook; cook until just done.
