Description

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 head green cabbage, chopped (about 4 cups)
  • 1 (15 oz) can white beans (such as cannellini or great northern), drained and rinsed
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon dried thyme
  • Salt and black pepper, to taste
  • 1/4 cup vegetable broth or water
  • Juice of 1/2 lemon (optional)
  • Chopped fresh parsley for garnish


Instructions

  1. Heat olive oil: In a large skillet or saucepan, heat olive oil over medium heat.
  2. Sauté onion: Add chopped onion and sauté for 3–4 minutes until softened.
  3. Add garlic: Stir in garlic and cook for another 30 seconds.
  4. Cook cabbage: Add chopped cabbage and sauté for 5–7 minutes until wilted.
  5. Combine ingredients: Add white beans, smoked paprika, thyme, salt, pepper, and vegetable broth. Stir to combine.
  6. Cook: Cover and cook for 8–10 minutes until cabbage is tender.
  7. Finish: Remove from heat, stir in lemon juice if using, and garnish with parsley. Serve warm.
