Instructions
- Prepare Carrot Cake Mixture: In a medium bowl, combine grated carrots, crushed graham crackers, chopped nuts, cinnamon, nutmeg, and salt.
- Make Cheesecake Filling: In a separate bowl, beat cream cheese with powdered sugar and vanilla until smooth.
- Combine and Chill: Mix the carrot mixture with the cream cheese filling. Refrigerate for 30 minutes to firm up.
- Shape and Coat: Roll the mixture into 1-inch balls. Dip in melted white chocolate or drizzle over the top. Optionally, roll in shredded coconut.
- Chill and Serve: Chill for 10–15 minutes until set. Serve cold.
