- Mix the vegetables and herbs: In a large bowl, combine the cooled cauliflower rice with halved cherry tomatoes, diced cucumber, finely chopped red onion, chopped fresh parsley, and chopped fresh mint. Toss gently to mix all ingredients evenly.
- Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper until well combined and emulsified.
- Toss the salad: Pour the dressing over the cauliflower and vegetable mixture. Toss everything together thoroughly so that the dressing coats all the ingredients evenly.
