Description

A comforting and flavorful one-pan meal featuring savory smoked sausage, tender rice, and melted cheddar and mozzarella cheeses. This easy stovetop recipe combines aromatic spices, diced tomatoes with green chilies, and rich chicken broth to create a hearty dish perfect for weeknight dinners.

Ingredients

Scale

Ingredients

  • 1 tablespoon olive oil
  • 1 pound smoked sausage, sliced into rounds
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Brown the Sausage: Heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook for about 5 minutes until browned. Remove the sausage from the skillet and set aside.
  2. Sauté Onion and Garlic: In the same skillet, add the diced onion and cook for 3 to 4 minutes until softened. Stir in the minced garlic and cook an additional 30 seconds until fragrant.
  3. Add Rice and Liquids: Add the rice to the skillet and stir to coat it with the oil and flavors. Pour in the chicken broth and the diced tomatoes with their juices. Season with paprika, salt, and pepper.
  4. Simmer the Rice: Bring the mixture to a simmer. Cover the skillet and reduce the heat to low. Cook for 18 to 20 minutes, or until the rice is tender and the liquid is fully absorbed.
  5. Combine Sausage and Cheese: Stir the cooked sausage, cheddar cheese, and mozzarella cheese into the rice until the cheeses are melted and everything is well combined.
  6. Garnish and Serve: Garnish with chopped parsley if desired. Serve the cheesy sausage and rice warm for a hearty meal.

Notes

  • You can substitute brown rice for a healthier option, but increase the broth quantity and cooking time accordingly.
  • For an extra spicy kick, add a pinch of cayenne pepper or use spicy sausage instead of smoked sausage.
