Wet Ingredients
- 1/2 cup (120g) pure natural peanut butter, smooth (mix oil in well)
- 1/2 cup (175g) honey
Dry Ingredients
- 1 1/2 cups rolled oats
- 1 cup sultanas
- 1/4 cup desiccated coconut, unsweetened
- 1/2 cup almonds, very roughly chopped
- 1/4 cup pepitas
- 2 tbsp white sesame seeds
- 1/8 tsp salt
- 1/2 tsp cinnamon
Instructions
- Mix Add-ins: In a large microwave-safe bowl, use a wooden spoon to thoroughly combine the rolled oats, sultanas, desiccated coconut, chopped almonds, pepitas, white sesame seeds, salt, and cinnamon. This creates your dry mix ready for binding.
- Prepare the Glue: In a saucepan over medium heat, combine the peanut butter and honey. Stir continually with a rubber spatula until smooth. Reduce the heat to low once combined. Watch carefully and cook for about 5 minutes, stirring constantly to prevent burning, until the mixture thickens to a caramel-like consistency that holds a path when drawn across the pan. Be vigilant to avoid scorching.
- Mix Together: Immediately pour the hot peanut butter and honey mixture over the oats and add-ins. Stir vigorously with the wooden spoon to thoroughly coat all the dry ingredients. If the mixture becomes too thick to mix, microwave it for 20 seconds to loosen, then continue mixing until evenly combined.
- Press Into Tin: Line a 20cm (8-inch) square tin with baking paper. Transfer the muesli mixture into the tin and spread it evenly to all corners. Use your hands and the wooden spoon to press down firmly—firmer pressing results in chewier bars.
- Set and Slice: Refrigerate the pressed mixture for at least 2 hours until firm. Once set, remove from the tin and cut into 10 bars by slicing the square in half, then dividing each half into five equal portions.
