Filling Ingredients
- 2 cups cooked white rice (or brown rice, still hot)
- 2 cups cooked broccoli
- 1 pound shredded cooked chicken (or rotisserie chicken)
- ½ ounce ranch seasoning (store-bought or homemade, about ½ packet)
- 8 ounces canned water chestnuts, drained and chopped (1 can)
- 1 cup freshly shredded cheddar cheese, divided
Wraps
- 4 whole wheat tortillas
Instructions
- Combine Filling: In a large bowl, place the hot cooked rice, cooked broccoli, shredded chicken, ranch seasoning, chopped water chestnuts, and ¾ cup of the shredded cheddar cheese. Stir everything together thoroughly to evenly distribute the flavors and ingredients.
- Prepare Wraps: Lay out each whole wheat tortilla flat on a clean surface. Sprinkle the remaining ¼ cup of shredded cheddar cheese in the center of each tortilla. Then, divide the chicken and rice filling evenly, placing about ¼ of the mixture on top of the cheese in each tortilla. Fold in the ends and roll the tortillas tightly to form wraps.
- Grill Wraps: Preheat a grill or a Foreman Grill. Place the wrapped tortillas on the grill and cook for about 8 minutes total, flipping once after 4 minutes if using a traditional grill or stovetop pan. Grill until the wraps are crispy on the outside and the cheese inside is melted.
- Serve: Remove the wraps from the grill, slice if desired, and serve hot. Enjoy your flavorful Chicken Ranch Wraps fresh off the grill!
Notes
- You can substitute brown rice for white rice for a healthier option.
- Rotisserie chicken works great and saves time, but freshly cooked shredded chicken is also excellent.
- Feel free to customize the ranch seasoning by using a homemade blend to control salt and additives.
- If you don’t have a grill, a stovetop pan or sandwich press will also work well to crisp the wraps.
- Adding some hot sauce or sliced jalapeños inside the wrap can add a spicy kick if desired.
