Ingredients
Scale
Proteins and Dairy
- 1 lb chicken sausage, sliced into 1/2-inch pieces
- 1/2 cup grated Parmesan cheese
Vegetables and Aromatics
- 2 cups broccoli florets
- 1 onion, chopped
- 2 cloves garlic, minced
Pantry Items
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Brown the Sausage: In a large pan, heat olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove from the pan and set aside.
- Sauté Aromatics: In the same pan, add chopped onion and minced garlic. Sauté until the onion is translucent and fragrant, about 2-3 minutes.
- Toast the Orzo: Add the orzo to the pan and stir to coat with the onion and garlic mixture. Cook for 2 minutes, allowing the orzo to toast slightly.
- Cook Orzo and Broccoli: Pour in the chicken broth and add the broccoli florets. Bring the mixture to a boil, then reduce the heat to low, cover the pan, and let it simmer for 8-10 minutes, or until the orzo and broccoli are tender.
- Combine Ingredients: Stir the cooked chicken sausage back into the pan. Add the grated Parmesan cheese and dried oregano. Mix well until the cheese is melted and everything is combined.
- Season: Season with salt, pepper, and red pepper flakes to taste.
- Serve: Serve immediately, garnished with additional Parmesan cheese if desired.
Notes
- You can substitute Italian sausage for chicken sausage if desired.
- For a creamier texture, stir in a little cream or milk before serving.
- Red pepper flakes add a nice heat, but can be omitted for a milder dish.
- Fresh oregano can be used instead of dried for more vibrant flavor.
- Use low-sodium chicken broth to reduce salt content.
