Instructions

  1. Preheat the oven: Preheat your oven to 450°F (232°C) to get it ready for baking the meatloaf.
  2. Prepare the veggies and ingredients: Wash and dry all fresh produce. Peel and mince the garlic cloves. Roughly chop the golden raisins. Halve the Yukon Gold potatoes lengthwise and then thinly slice them crosswise. Finely chop the chipotle pepper, and be sure to wash your hands and cleaning surfaces thoroughly after handling it due to its spiciness.
  3. Make the chipotle ketchup glaze: In a small bowl, combine the ketchup with as much chopped chipotle pepper as you prefer to control the spiciness. Season this mixture with salt and pepper to taste.
  4. Mix the meatloaf: In a large bowl, combine ground beef, egg, minced garlic, panko breadcrumbs, chopped golden raisins, and meatloaf spice blend. Season with salt and pepper. Using your hands, gently mix everything until just combined, avoiding over-mixing for a tender texture.
  5. Shape the meatloaf: Place a large piece of foil or parchment paper on a sheet pan. Transfer the meat mixture onto the center of the foil and use the foil to shape the mixture into a tightly packed loaf approximately 10 inches by 3 inches, flattening the bottom so it sits evenly on the pan.
  6. Glaze and bake: Evenly spread the chipotle ketchup glaze over the top of the meatloaf.
