Scale
Base Ingredients
- 1 3/4 cup desiccated coconut
- 1 3/4 cup powdered sugar
- 1/2 cup sweetened condensed milk
Coating
- 2 cups dark or semi-sweet chocolate chips
- 2 Tbsp shortening
Instructions
- Combine Base Ingredients: In a large bowl, thoroughly mix the desiccated coconut with powdered sugar and sweetened condensed milk until well combined into a sticky mixture.
- Shape Balls: Using your hands, form the mixture into 1-inch diameter balls. Place each on a pan lined with wax paper. Refrigerate until the balls become firm and easy to handle, approximately 30 minutes.
- Melt Chocolate Coating: In a microwave-safe glass bowl, combine chocolate chips and shortening. Microwave in short bursts of 20-30 seconds, stirring after each, until smooth and fully melted.
- Dip Balls in Chocolate: Using a fork or dipping tool, dip each coconut ball into the melted chocolate, allowing excess chocolate to drip back into the bowl. Place the coated balls back onto the wax paper-lined pan.
- Set and Store: Allow the chocolate coating to set at room temperature or place the pan back into the refrigerator until the chocolate hardens completely. Store the finished chocolate coconut balls in the refrigerator to keep fresh.
Notes
- For a firmer texture, chill the balls longer before dipping in chocolate.
- Use high-quality chocolate chips for a richer flavor and smoother coating.
- Shortening helps to thin out the chocolate making it easier to coat the balls evenly.
- Store these treats in an airtight container in the refrigerator for up to one week.
