Ingredients
Scale
Filling:
- 10 ounces maraschino cherries (with stems)
- 2 1/4 cups powdered sugar (sifted)
- 4 Tablespoons unsalted butter (softened)
- 2 Tablespoons light corn syrup
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon almond extract
Coating:
- 12 ounces chocolate almond bark
Instructions
- Mix the Filling Ingredients: In a medium bowl, combine the sifted powdered sugar, softened butter, light corn syrup, vanilla extract, and almond extract until well incorporated.
- Form the Dough: Use clean hands to mix the ingredients thoroughly. Although it will start out dry, continue mixing until it comes together into a pliable dough resembling the consistency of Playdoh.
- Prepare Baking Sheet: Line a baking sheet with parchment paper to place the shaped cherries on for drying.
- Shape Dough Balls: Take about 2 teaspoons of dough and roll it into a ball. Place each ball on the lined baking sheet. Repeat until all dough is used.
- Flatten Dough Disks: Press each dough ball into a disk approximately 2 inches in diameter to prepare for wrapping the cherries.
- Wrap Cherries: Take a maraschino cherry and enclose it completely in the dough, smoothing the surface so the cherry is fully covered. Place wrapped cherries back on the baking sheet. Repeat for all cherries.
- Melt Almond Bark: Place the chocolate almond bark in a microwave-safe dish. Heat for 1 minute, stir, then heat for an additional 30 seconds and stir again until the chocolate is fully melted and smooth.
- Dip Covered Cherries: Holding each cherry by the stem, dip it into the melted chocolate to cover the entire dough-wrapped cherry.
- Drain Excess Chocolate: Allow excess chocolate to drip off, then return the dipped cherry to the parchment-lined baking sheet to dry.
- Repeat Dipping: Continue dipping each dough-covered cherry until all are coated with chocolate.
- Drizzle Chocolate Decoration: Reheat any remaining almond bark. Pour it into a small Ziplock bag, cut a tiny corner off, and drizzle chocolate over the dried cherries for decoration.
- Set and Serve: Allow the chocolate drizzle to dry completely before serving or storing.
Notes
- Ensure the cherries are well-drained before wrapping to prevent excess moisture affecting the dough.
- Use room-temperature butter for easier mixing.
- When melting chocolate, stir frequently to avoid burning.
- Store finished cherries in an airtight container at room temperature or refrigerated if preferred.
- For variation, try using dark or milk chocolate almond bark.
