Instructions

  1. Prep: Preheat your oven to 375°F (190°C) and line several baking sheets with parchment paper or silicone mats to prevent sticking and make cleanup easier.
  2. Make cookie dough: In a medium bowl, whisk together the flour, baking soda, and salt. In a separate large bowl, use a hand mixer to cream the softened butter, granulated sugar, brown sugar, egg, creamy peanut butter, and vanilla extract until the mixture is light and fluffy. Gradually add the flour mixture to the wet ingredients and mix on low speed just until combined. Be careful not to overmix; the dough should be crumbly but hold together to ensure soft cookies.
  3. Shape and bake cookies: Roll the dough into 1-inch balls, then roll each ball in the 1/4 cup of granulated sugar to coat.
