Ingredients
Scale
For the Mushrooms
- 1 pound white button mushrooms, sliced
For the Cowboy Butter
- 1 stick unsalted butter
- 1 tablespoon Dijon mustard
- 1-2 tablespoons fresh chives, chopped
- 1-2 tablespoons fresh parsley, chopped
- 1-2 tablespoons fresh thyme, chopped
- 3-4 cloves garlic, minced
- 1 teaspoon lemon juice
- 1 teaspoon paprika
- 1/8 teaspoon cayenne pepper (optional)
- 1/8 teaspoon crushed red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- Prepare Mushrooms: Clean the white button mushrooms thoroughly and slice them thinly, making sure they are dry to achieve the best sautéed texture.
- Make Cowboy Butter: In a small bowl, combine the softened unsalted butter with Dijon mustard, chopped fresh chives, parsley, thyme, minced garlic, lemon juice, paprika, and optional cayenne pepper and crushed red pepper flakes. Mix well to create a fragrant herb and spice butter blend.
- Heat Skillet and Melt Butter: Place a large skillet over medium heat. Once hot, add the cowboy butter mixture and allow it to melt fully, releasing the aromas of the herbs and spices.
- Sauté Mushrooms: Add the sliced mushrooms to the skillet with the melted butter mixture. Cook for 20 to 22 minutes, stirring occasionally, until the mushrooms are golden brown, tender, and have absorbed the rich flavor of the cowboy butter.
- Season and Serve: Taste the sautéed mushrooms and season with salt and freshly ground black pepper as needed. Serve the cowboy mushrooms hot as a side dish or topping.
Notes
- Using fresh herbs provides the best flavor, but dried herbs can be substituted if necessary—reduce the amount accordingly.
- Adjust cayenne pepper and red pepper flakes to your preferred spice level or omit for a milder dish.
- Be sure not to overcrowd the skillet to allow mushrooms to brown properly instead of steaming.
- This dish pairs wonderfully with steak, grilled meats, or toasted rustic bread for a hearty appetizer.
- Leftovers can be refrigerated and gently reheated on the stove for best texture.
