Description

A wholesome and naturally sweetened cranberry date oatmeal recipe that combines tender oats with tart cranberries and rich date paste. Perfect for a comforting breakfast that balances flavors and textures with minimal ingredients and straightforward preparation.

Ingredients

Scale

Oatmeal Mixture

  • 2 cups old fashioned oatmeal
  • 3 1/2 cups water
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen cranberries

Date Paste

  • 1 cup chopped dates
  • 1 cup water

Instructions

  1. Prepare Date Paste: In a saucepan, combine the chopped dates and 1 cup of water. Heat over medium-high heat for 6-8 minutes, stirring occasionally until the dates break down and form a smooth paste. Remove from heat and set aside.
  2. Cook Oatmeal: In a clean saucepan, bring 3 1/2 cups of water to a boil. Add the old fashioned oats, a pinch of salt, and vanilla extract. Reduce to medium heat and cook for 2 minutes.
  3. Add Cranberries: Stir in the cranberries and continue cooking the oatmeal mixture for an additional 3-4 minutes until the berries soften and the oats are tender.
  4. Combine Date Paste and Oatmeal: Remove the oatmeal from heat. Reserve a large spoonful of the date paste for topping and stir the remaining paste into the oatmeal until evenly combined.
  5. Serve: Spoon the oatmeal into bowls, top each serving with the reserved date paste, and serve immediately while warm for the best flavor and texture.

Notes

  • Use fresh or frozen cranberries depending on availability; frozen cranberries work well too.
  • Adjust cooking water slightly for preferred oatmeal consistency.
  • For a creamier texture, substitute part of the water with milk or a dairy-free alternative.
  • Ensure to stir the oats frequently to prevent sticking during cooking.
  • Store leftovers in the refrigerator for up to 3 days and reheat with a splash of water or milk.
