For the Casserole:
- 2 cups cooked shredded chicken
- 1 tablespoon olive oil
- 3 cups fresh spinach (chopped)
- 2 cloves garlic (minced)
- 1 (10 oz) can cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup milk
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
For the Topping (optional):
- 1/2 cup crushed Ritz crackers or breadcrumbs
- 1 tablespoon melted butter
Instructions
- Preheat and Prepare: Preheat the oven to 375°F (190°C) and grease a 9×9-inch baking dish.
- Sauté Spinach: In a skillet, sauté spinach in olive oil until wilted. Add minced garlic and cook for 1 minute.
- Mix Ingredients: In a bowl, combine chicken, cooked spinach, garlic, cream of chicken soup, sour cream, milk, onion powder, salt, and pepper. Add mozzarella and half of the Parmesan.
- Assemble and Bake: Spread mixture in the baking dish. Optional: top with crushed crackers mixed with melted butter and remaining Parmesan. Bake for 25–30 minutes until golden and bubbly.
- Serve: Allow to cool slightly before serving.
Notes
- Rotisserie chicken can be used for convenience.
- Enhance with cooked pasta or rice.
- For a low-carb option, omit the topping and serve with cauliflower rice.
