For the Casserole:

  • 2 cups cooked shredded chicken
  • 1 tablespoon olive oil
  • 3 cups fresh spinach (chopped)
  • 2 cloves garlic (minced)
  • 1 (10 oz) can cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

For the Topping (optional):

  • 1/2 cup crushed Ritz crackers or breadcrumbs
  • 1 tablespoon melted butter


Instructions

  1. Preheat and Prepare: Preheat the oven to 375°F (190°C) and grease a 9×9-inch baking dish.
  2. Sauté Spinach: In a skillet, sauté spinach in olive oil until wilted. Add minced garlic and cook for 1 minute.
  3. Mix Ingredients: In a bowl, combine chicken, cooked spinach, garlic, cream of chicken soup, sour cream, milk, onion powder, salt, and pepper. Add mozzarella and half of the Parmesan.
  4. Assemble and Bake: Spread mixture in the baking dish. Optional: top with crushed crackers mixed with melted butter and remaining Parmesan. Bake for 25–30 minutes until golden and bubbly.
  5. Serve: Allow to cool slightly before serving.

Notes

  • Rotisserie chicken can be used for convenience.
  • Enhance with cooked pasta or rice.
  • For a low-carb option, omit the topping and serve with cauliflower rice.
