Instructions

  1. Dissolve Jello: Empty the strawberry Jell-O package into a large bowl. Carefully pour 2 cups of boiling water over the jello powder, stirring constantly until the gelatin is completely dissolved and the mixture is smooth.
  2. Add Frozen Strawberries: Stir in the 24 ounces of frozen strawberries until they begin to thaw and are mostly blended into the gelatin. Then, carefully pour the mixture into a large blender.
  3. Prepare Banana Mixture: In a small bowl, roughly mash the banana along with the 2 tablespoons of lemon juice. This helps prevent the banana from browning and adds brightness to the flavor. Add this mashed banana mixture into the blender with the jello and strawberries.
  4. Blend with Sour Cream: Add the 2 cups of sour cream to the blender. Blend the entire mixture for about 30 seconds to combine everything. Some small lumps of banana are acceptable for texture.
  5. Prepare Mold: Spray a Jello mold or a 10-12 cup bundt pan lightly with nonstick spray. Alternatively, you can use a pretty bowl without spraying.
  6. Chill: Pour the blended jello mixture into the prepared mold or bowl. Cover the mold tightly with plastic wrap and refrigerate for several hours or overnight, until it is completely set and chilled.
  7. Unmold Jello: To serve, place a plate over the top of the mold and invert it to release the jello. If it does not come out easily, dip the bottom of the mold in hot water for 1-3 seconds to loosen the edges, then invert again.
  8. Serve: Garnish with fresh strawberries if desired, and serve chilled.
