Ingredients
Scale
Chicken
- 2 large chicken breasts
- Garlic powder, to taste
- Italian seasoning, to taste
- Salt & pepper, to taste
- Flour, for dredging
- Olive oil, for cooking
- 3 tablespoons butter (divided)
Sauce
- 8 ounces cremini mushrooms, sliced
- 1/2 cup dry white apple vinegar
- 3/4 cup heavy cream
Instructions
- Prepare Chicken: Cut the chicken breasts in half lengthwise to create thinner cutlets. Season both sides generously with garlic powder, Italian seasoning, salt, and pepper. Dredge each piece lightly in flour to help create a crispy crust when seared.
- Sear Chicken: Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Once hot, add the chicken pieces and sear for 4-5 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside on a plate.
- Sauté Mushrooms: In the same skillet, add the remaining 2 tablespoons of butter. Add the sliced cremini mushrooms and cook for 5-6 minutes until they are soft and slightly browned. Stir in minced garlic and cook for an additional minute until fragrant.
- Deglaze Pan: Pour in the dry white apple vinegar to deglaze the skillet, scraping up any browned bits from the bottom. Allow the vinegar to reduce by half over 2-3 minutes, intensifying its flavor.
- Create Sauce & Finish Cooking: Stir in the heavy cream and mix well to create a creamy sauce. Return the seared chicken breasts to the skillet, nestling them in the sauce. Cook for an additional 5 minutes on low heat to allow the flavors to meld and the chicken to finish cooking.
Notes
- If you prefer a thicker sauce, let the cream simmer a bit longer to reduce further.
- Serve this dish with a side of steamed vegetables, mashed potatoes, or crusty bread to soak up the creamy sauce.
- Use fresh mushrooms for the best flavor; cremini mushrooms add an earthy depth.
- Adjust seasoning with salt and pepper at the end to taste.
