Description

A simple and delicious recipe for crispy rice cooked with scrambled eggs. This dish combines fluffy steamed rice with golden, crispy edges and soft scrambled eggs, making it a comforting and satisfying meal.

Ingredients

Scale

Rice

  • 2 cups of rice
  • 4 cups of water

Eggs

  • 2 eggs
  • Oil for frying (about 2-3 tablespoons)

Instructions

  1. Rinse Rice: Rinse 2 cups of rice under cold water until the water runs clear to remove excess starch.
  2. Cook Rice: In a medium saucepan, add the rinsed rice and 4 cups of water and bring to a boil over high heat.
  3. Simmer Rice: Reduce the heat to low, cover the saucepan, and let the rice simmer for 18-20 minutes until the water is fully absorbed and the rice is cooked through.
  4. Cool Rice: Remove the rice from heat and let it cool slightly to allow it to firm up for frying.
  5. Heat Oil: In a separate skillet, heat 2-3 tablespoons of oil over medium heat until shimmering.
  6. Whisk Eggs: Crack two eggs into a bowl and whisk thoroughly to blend yolks and whites.
  7. Cook Scrambled Eggs: Pour the whisked eggs into the hot skillet and cook, stirring gently, until the eggs are soft and fully scrambled.
  8. Add Rice: Add the cooked rice to the skillet with the scrambled eggs and spread the mixture out evenly across the skillet.
  9. Crisp First Side: Cook the rice and egg mixture without stirring for 5-7 minutes, allowing the bottom layer to become crispy and golden brown.
  10. Flip and Crisp Other Side: Carefully flip the crispy rice and egg mixture over in the skillet and cook for an additional 5-7 minutes to crisp the other side.
  11. Serve: Remove the crispy rice with eggs from the skillet and serve immediately while hot. Enjoy your crispy rice with fluffy scrambled eggs!

Notes

  • Use day-old or cooled rice for better crispiness; freshly cooked rice can be too soft and sticky.
  • Adjust the oil quantity depending on how crispy and rich you want the dish.
  • You can add seasonings like salt, pepper, soy sauce, or scallions to enhance flavor.
  • For an extra layer of flavor, consider adding diced vegetables or cooked meats.
