This Crock Pot Cinnamon Roll Casserole is a warm, comforting breakfast treat made by combining quartered cinnamon rolls with a sweet cinnamon sugar blend and a creamy egg mixture, then slow-cooked to perfection. Topped with generous amounts of creamy icing, it’s an easy, crowd-pleasing dish that delivers all the flavors of classic cinnamon rolls without the fuss of baking.
Ingredients
Scale
Cinnamon Roll Base
- 3 cans Pillsbury Grands Cinnamon Rolls (17.5 oz cans), quartered
- ½ cup granulated sugar
- ½ cup light brown sugar
- 1 teaspoon ground cinnamon
Egg Mixture
- 5 large eggs
- 1 cup whole milk
- ¼ cup maple syrup
Topping
- 3 cans Pillsbury Grands Cinnamon Rolls icing (reserve 1 can for cooking, 2 cans for serving)
Instructions
- Prepare the Base: Grease the slow cooker thoroughly and add the quartered cinnamon rolls, granulated sugar, light brown sugar, and ground cinnamon. Toss everything together until the pieces are evenly coated with the sugar and cinnamon mixture.
- Mix Wet Ingredients: In a medium bowl, whisk together the eggs, whole milk, and maple syrup until the mixture is smooth and well combined. Pour this mixture evenly over the cinnamon rolls in the slow cooker. Gently stir a couple of times to ensure the egg mixture gets in and around all the cinnamon roll pieces.
- Cook the Casserole: Spoon one can of cinnamon roll icing over the top. Cover the slow cooker and cook on low heat for 3 to 4 hours. The cinnamon rolls will puff up and become fully cooked and fluffy during this time. Check toward the end of cooking to ensure the casserole is set and cooked through.
- Finish and Serve: After cooking, spread the remaining two cans of icing evenly over the top of the casserole. Serve warm for a decadent, gooey cinnamon roll experience without needing an oven.
Notes
- Ensure the slow cooker is well greased to prevent sticking.

- This dish can be kept warm in the slow cooker if needed before serving.
- Feel free to add chopped nuts or raisins for extra texture and flavor.
- Leftovers can be refrigerated and reheated gently in the microwave.
