Description

These Decadent Buckeye Graham Crackers are a delightful no-bake treat combining creamy peanut butter filling sandwiched between crispy graham crackers and topped with rich melted chocolate. Perfect for a quick, indulgent dessert or snack.

Ingredients

Scale

Peanut Butter Filling

  • 1 cup creamy peanut butter (240g)
  • 4 tablespoons salted butter, melted (56g)
  • 1 cup powdered sugar (120g)
  • ¼ teaspoon kosher salt

Crackers

  • 12 full graham crackers, broken in half (24 squares)

Chocolate Coating

  • 1 cup chocolate chips (170g)
  • 1 tablespoon coconut oil (optional, for smoother chocolate)

Instructions

  1. Prepare Peanut Butter Filling: In a bowl, mix the peanut butter, melted butter, powdered sugar, and kosher salt together until the mixture is smooth and thick, forming the peanut butter filling.
  2. Break Graham Crackers: Break the 12 full graham crackers into halves to create 24 squares for assembling the sandwiches.
  3. Assemble Sandwiches: Spread the peanut butter filling evenly on 12 of the graham cracker squares, then top each with one of the remaining 12 squares to form sandwiches.
  4. Freeze Sandwiches: Place the assembled sandwiches on a parchment-lined tray and freeze for 10 to 15 minutes to firm up before dipping.
  5. Melt Chocolate: Combine the chocolate chips and coconut oil (if using) in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and smooth.
  6. Dip Sandwiches in Chocolate: Remove the sandwiches from the freezer and dip the tops of each sandwich into the melted chocolate, coating them generously.
  7. Optional Toppings: Place the dipped sandwiches back on the tray and optionally sprinkle with sea salt or crushed graham crackers for extra texture and flavor.
  8. Set the Chocolate: Refrigerate or freeze the dipped sandwiches for 10 to 15 minutes, or until the chocolate coating is firm and set.

Notes

  • Using coconut oil helps make the melted chocolate smoother and easier to work with, but it’s optional.
  • For a crunchy topping, try adding crushed graham crackers or sea salt on the chocolate before it sets.
  • Store finished buckeye crackers in the refrigerator or freezer to keep the chocolate firm and the peanut butter filling fresh.
  • Ensure the sandwiches are chilled well before dipping to prevent the chocolate from sliding off.
