- 12 full graham crackers, broken in half (24 squares)
Chocolate Coating
- 1 cup chocolate chips (170g)
- 1 tablespoon coconut oil (optional, for smoother chocolate)
Instructions
- Prepare Peanut Butter Filling: In a bowl, mix the peanut butter, melted butter, powdered sugar, and kosher salt together until the mixture is smooth and thick, forming the peanut butter filling.
- Break Graham Crackers: Break the 12 full graham crackers into halves to create 24 squares for assembling the sandwiches.
- Assemble Sandwiches: Spread the peanut butter filling evenly on 12 of the graham cracker squares, then top each with one of the remaining 12 squares to form sandwiches.
- Freeze Sandwiches: Place the assembled sandwiches on a parchment-lined tray and freeze for 10 to 15 minutes to firm up before dipping.
- Melt Chocolate: Combine the chocolate chips and coconut oil (if using) in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and smooth.
- Dip Sandwiches in Chocolate: Remove the sandwiches from the freezer and dip the tops of each sandwich into the melted chocolate, coating them generously.
- Optional Toppings: Place the dipped sandwiches back on the tray and optionally sprinkle with sea salt or crushed graham crackers for extra texture and flavor.
- Set the Chocolate: Refrigerate or freeze the dipped sandwiches for 10 to 15 minutes, or until the chocolate coating is firm and set.
