Dutch Cocoa Cookies:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 3/4 cups all-purpose flour
  • 3/4 cup Dutch-process cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semisweet chocolate chips (optional)


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream butter and sugars: In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs and vanilla: Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, Dutch-process cocoa powder, baking soda, and salt.
  5. Combine wet and dry mixtures: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in chocolate chips if using.
  6. Bake: Scoop tablespoon-sized portions of dough onto the prepared baking sheets. Bake for 9–11 minutes, or until the edges are set and the centers look slightly soft.
  7. Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For extra richness, sprinkle a pinch of sea salt on top before baking.
  • You can also chill the dough for 30 minutes to reduce spreading.
