For the Soup:
- 2 cans (15 oz each) black beans, drained and rinsed
- 1 cup chunky salsa (mild, medium, or hot)
- 1 1/2 cups vegetable or chicken broth
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- Juice of 1/2 lime
Optional Toppings:

Instructions
- In a medium saucepan, combine the black beans, salsa, broth, cumin, chili powder, garlic powder, salt, and pepper. Stir well and bring to a simmer over medium heat.
- Cook for 10–15 minutes, stirring occasionally, to allow flavors to blend.
- Using an immersion blender, blend part of the soup directly in the pot for a creamier texture, leaving some beans whole.
- Alternatively, transfer half the soup to a blender, blend until smooth, and return it to the pot.
- Stir in the lime juice and adjust seasoning to taste.
- Serve hot with your favorite toppings.
Notes
- Add cooked chicken or corn for a heartier soup.
- Use fire-roasted salsa for added depth.
