For the Soup:

  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 cup chunky salsa (mild, medium, or hot)
  • 1 1/2 cups vegetable or chicken broth
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Juice of 1/2 lime

Optional Toppings:

  • Sour cream
  • Shredded cheese
  • Avocado
  • Cilantro
  • Tortilla chips

Instructions

  1. In a medium saucepan, combine the black beans, salsa, broth, cumin, chili powder, garlic powder, salt, and pepper. Stir well and bring to a simmer over medium heat.
  2. Cook for 10–15 minutes, stirring occasionally, to allow flavors to blend.
  3. Using an immersion blender, blend part of the soup directly in the pot for a creamier texture, leaving some beans whole.
  4. Alternatively, transfer half the soup to a blender, blend until smooth, and return it to the pot.
  5. Stir in the lime juice and adjust seasoning to taste.
  6. Serve hot with your favorite toppings.

Notes

  • Add cooked chicken or corn for a heartier soup.
  • Use fire-roasted salsa for added depth.
  • This soup freezes well for up to 3 months.
