- 1 pound ground beef (or a mix of beef and pork)
- 1/2 cup Italian-style breadcrumbs
- 1/3 cup grated Parmesan cheese
- 1/4 cup milk
- 1 egg
- 1/4 cup finely diced onion
- 2 cloves garlic (minced)
- 2 teaspoons Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Topping:
- 1/2 cup marinara sauce
- 1/2 cup shredded mozzarella cheese
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a muffin tin.
- Prepare the meatloaf mixture: In a large bowl, combine the ground meat, breadcrumbs, Parmesan, milk, egg, onion, garlic, Italian seasoning, salt, and pepper. Mix just until combined—do not overmix.
- Form the mini meatloaves: Divide the mixture into the muffin tin, shaping each into a mini meatloaf.
- Add toppings: Spoon marinara sauce over each meatloaf.
- Bake: Bake for 20-25 minutes until cooked through.
- Add cheese: Sprinkle each meatloaf with mozzarella and return to the oven until cheese melts.
- Rest and serve: Let the meatloaves rest, garnish with parsley if desired, and serve.
