Description

These Easy Lentil Patties are a delicious and healthy vegetarian treat, perfect as a snack or light meal. Made from soaked red lentils and flavored with garlic, onion, and Italian seasoning, these patties are pan-fried to a golden crisp and served with a creamy lemon tahini dip that adds a burst of tangy flavor.

Ingredients

Scale

Lentil Patties

  • 2 cups dry red lentils
  • 1 medium white onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • ½ tablespoon chickpea flour
  • 2 tablespoons Italian seasoning
  • Sea salt and black pepper to taste
  • Olive oil for frying

Lemon Tahini Dip

  • â…“ cup runny tahini
  • 4 tablespoons lemon juice
  • 1-2 cloves garlic, minced
  • Sea salt to taste
  • Water, as needed to thin
  • Fresh parsley, chopped
  • Squeeze of lemon juice

Instructions

  1. Prepare the Lentils: Soak the red lentils overnight in water. After soaking, drain and rinse them thoroughly to remove excess starch and impurities.
  2. Blend the Mixture: In a food processor, combine the soaked lentils, diced onion, minced garlic, tomato paste, chickpea flour, Italian seasoning, salt, and pepper. Pulse the mixture until it becomes slightly chunky but well combined, suitable for forming into patties.
  3. Form Patties: Using your hands, shape the lentil mixture into small patties approximately 1.5 inches wide, ensuring they hold together without falling apart.
  4. Fry the Patties: Heat olive oil in a frying pan over medium heat. Fry the patties for about 3 to 4 minutes on each side or until they turn golden brown and crispy. Remove and drain on paper towels if desired.
  5. Make the Dip: In a bowl, whisk together the runny tahini, lemon juice, minced garlic, and sea salt. Add water gradually to achieve your desired consistency. Stir in freshly chopped parsley and finish with a squeeze of lemon juice for brightness.
  6. Serve: Serve the warm lentil patties alongside the lemon tahini dip for dipping. Enjoy these crispy, flavorful patties as an appetizer or light meal.

Notes

  • Soaking lentils overnight helps soften them and reduces cooking time.
  • Chickpea flour acts as a binder to keep patties intact while frying.
  • You can bake the patties at 375°F (190°C) for 20 minutes as a healthier alternative to frying.
  • Adjust the consistency of the dip by adding more or less water depending on preference.
  • Fresh parsley in the dip adds a fresh, herbaceous note.
