Ingredients
Scale
Sweet Potatoes
- 2 medium sweet potatoes
Seasoning & Flavoring
- 2 tablespoons melted butter or olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder (optional)
- 1/4 teaspoon paprika (optional)
Toppings
- 1/3 cup grated parmesan cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it to prevent sticking and ensure easy cleanup.
- Prepare Sweet Potatoes: Peel the sweet potatoes and cut them into 1 to 1.5-inch cubes. Place the cubes into a large mixing bowl.
- Season Sweet Potatoes: Add melted butter (or olive oil), minced garlic, salt, pepper, and the optional garlic powder and paprika to the bowl. Toss everything thoroughly to ensure the sweet potatoes are evenly coated with the seasoning mixture.
- Roast Sweet Potatoes: Spread the sweet potato cubes in a single layer on the prepared baking sheet. Place in the oven and roast for 30–35 minutes, flipping them halfway through cooking, until they are crispy and golden on the edges and tender in the center.
- Add Parmesan Cheese: Remove the roasted sweet potatoes from the oven and immediately sprinkle with the grated parmesan cheese. Toss lightly so the cheese melts and adheres to the warm sweet potatoes.
- Garnish and Serve: Finish by sprinkling freshly chopped parsley over the sweet potatoes. For extra flavor, optionally drizzle any leftover garlic butter from the pan before serving warm.
Notes
- For a vegan version, substitute parmesan cheese with a dairy-free alternative.
- To enhance crispiness, ensure sweet potato cubes are spaced out and not overcrowded on the baking sheet.
- Adjust the amount of garlic and spices according to your taste preference.
- The optional garlic powder and paprika add an extra depth of flavor but can be omitted if desired.
- Leftover roasted sweet potatoes can be stored in an airtight container in the refrigerator for up to 3 days.
