Description

These Giant Pancakes are fluffy and golden, perfect for a delightful breakfast or brunch. Made with simple ingredients like flour, baking powder, sugar, and milk, they are cooked in a non-stick pan to achieve the perfect texture. Served with sliced strawberries, icing sugar, and golden syrup, they offer a deliciously sweet start to your day.

Ingredients

Scale

Dry Ingredients

  • 2 1/2 cups plain flour
  • 5 tsp baking powder
  • 3 tbsp sugar
  • 1/2 tsp salt

Wet Ingredients

  • 1 tsp vanilla essence
  • 1 egg
  • 2 cups + 2 tbsp milk

For Cooking and Serving

  • 1 tsp butter
  • Sliced strawberries
  • Golden syrup
  • Icing sugar

Instructions

  1. Mix Dry Ingredients: Combine flour, baking powder, sugar, and salt in a bowl, then whisk briefly to blend them evenly.
  2. Add Wet Ingredients: Pour in vanilla essence, egg, and milk into the dry mixture and whisk until the batter is smooth and lump-free.
  3. Heat Butter: Place butter in a non-stick 25cm (10″) diameter pan over medium-high heat. Use an egg flip to spread the butter evenly across the pan’s surface.
  4. Remove Excess Butter: Wipe the pan thoroughly with a paper towel to remove any excess butter, ensuring even cooking without greasiness.
  5. Pour Batter: Pour half of the pancake batter into the pan and swirl to cover the bottom evenly.
  6. Cook First Side: Cook until numerous bubbles appear on the surface and the edges are golden underneath, about 2 minutes.
  7. Flip Pancake: Flip the pancake carefully and cook the other side for 1 1/2 to 2 minutes until golden and cooked through.
  8. Repeat: Remove the cooked pancake and repeat the process with the remaining batter. No additional butter is needed for subsequent pancakes.
  9. Serve: Optionally, top the pancakes with sliced strawberries, a sprinkle of icing sugar, and serve golden syrup on the side for drizzling.

Notes

  • Use a non-stick pan to prevent sticking and ensure even cooking.
  • Swirling the batter helps achieve an even thickness for giant pancakes.
  • Wiping off excess butter prevents greasy pancakes and helps achieve a golden crust.
  • Adjust cooking time slightly based on your stove’s heat settings to avoid burning.
  • For fluffier pancakes, avoid over-mixing once wet ingredients are added.
