- 1 egg
- 2 cups + 2 tbsp milk

Instructions
- Mix Dry Ingredients: Combine flour, baking powder, sugar, and salt in a bowl, then whisk briefly to blend them evenly.
- Add Wet Ingredients: Pour in vanilla essence, egg, and milk into the dry mixture and whisk until the batter is smooth and lump-free.
- Heat Butter: Place butter in a non-stick 25cm (10″) diameter pan over medium-high heat. Use an egg flip to spread the butter evenly across the pan’s surface.
- Remove Excess Butter: Wipe the pan thoroughly with a paper towel to remove any excess butter, ensuring even cooking without greasiness.
- Pour Batter: Pour half of the pancake batter into the pan and swirl to cover the bottom evenly.
- Cook First Side: Cook until numerous bubbles appear on the surface and the edges are golden underneath, about 2 minutes.
- Flip Pancake: Flip the pancake carefully and cook the other side for 1 1/2 to 2 minutes until golden and cooked through.
- Repeat: Remove the cooked pancake and repeat the process with the remaining batter. No additional butter is needed for subsequent pancakes.
- Serve: Optionally, top the pancakes with sliced strawberries, a sprinkle of icing sugar, and serve golden syrup on the side for drizzling.
