Ingredients
Scale
Chicken and Marinade
- 1 pound boneless, skinless chicken breasts (about 3-4 breasts)
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 3 cloves garlic, minced
- 2 teaspoons dried oregano
- Salt and pepper to taste
Vegetables
- 1 cup bell peppers (any color), chopped into chunks
- 1 medium red onion, chopped into chunks
For Serving
- 1 cup tzatziki sauce for dipping
Instructions
- Prepare the Marinade: In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper until well combined to create a flavorful marinade.
- Marinate the Chicken: Cut the chicken breasts into one-inch cubes. Place them in a resealable bag or bowl, pour the marinade over the chicken, seal or cover, and refrigerate for at least one hour to allow the flavors to infuse. For best results, marinate for two hours.
- Chop Veggies: While the chicken is marinating, chop the bell peppers and red onion into chunks similar in size to the chicken pieces to ensure even cooking.
- Assemble Skewers: Thread the marinated chicken cubes onto skewers, alternating with chunks of bell peppers and red onion. Be careful not to pack the ingredients tightly; leaving space helps them cook evenly.
- Grill: Preheat your grill to medium-high heat, around 375°F (190°C). Place the skewers on the grill and cook for about 10-15 minutes total, turning occasionally to ensure the chicken is fully cooked and has a nice char.
- Serve: Once cooked through, transfer the kabobs to plates and serve immediately with a side of creamy tzatziki sauce for dipping.
Notes
- For best flavor, marinate the chicken for two hours, but one hour is sufficient if short on time.
- Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
- You can substitute chicken breasts with boneless thighs for juicier kabobs.
- Adjust the amount of garlic and oregano according to your taste preference.
- Serve with warm pita bread or a Greek salad for a complete meal.
