- 8 small corn or flour tortillas
- 1 tablespoon olive oil
- 1 (15-ounce) can chickpeas, drained and rinsed
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 1 cup shredded green cabbage
- 1 ripe avocado, sliced
- 1/4 cup thinly sliced green onions
- 1/4 cup crumbled feta cheese (optional)
- Fresh cilantro for garnish
For the Green Goddess Sauce:
- 1/2 cup Greek yogurt or sour cream
- 1/2 avocado
- 1/4 cup fresh parsley
- 1/4 cup fresh basil
- 2 tablespoons chopped chives
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 clove garlic
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Prepare the Green Goddess Sauce: Blend Greek yogurt, avocado, parsley, basil, chives, lemon juice, Dijon mustard, garlic, olive oil, salt, and pepper until smooth. Set aside.
- Cook the Chickpeas: Heat olive oil in a skillet, add chickpeas, smoked paprika, garlic powder, salt, and pepper. Cook until golden and crispy.
- Assemble the Tacos: Warm tortillas, layer with chickpeas, cabbage, avocado, green onions, and Green Goddess sauce. Top with feta and cilantro.
- Serve: Enjoy immediately!
Notes
- You can substitute tofu, grilled shrimp, or roasted cauliflower for the chickpeas.
