Description

These Green Goddess Tacos are a delightful vegetarian option packed with flavor and nutrition. Crispy chickpeas, creamy avocado, crunchy cabbage, and a zesty Green Goddess sauce come together in a perfect taco combination.

Main Ingredients:

  • 8 small corn or flour tortillas
  • 1 tablespoon olive oil
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 cup shredded green cabbage
  • 1 ripe avocado, sliced
  • 1/4 cup thinly sliced green onions
  • 1/4 cup crumbled feta cheese (optional)
  • Fresh cilantro for garnish

For the Green Goddess Sauce:

  • 1/2 cup Greek yogurt or sour cream
  • 1/2 avocado
  • 1/4 cup fresh parsley
  • 1/4 cup fresh basil
  • 2 tablespoons chopped chives
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the Green Goddess Sauce: Blend Greek yogurt, avocado, parsley, basil, chives, lemon juice, Dijon mustard, garlic, olive oil, salt, and pepper until smooth. Set aside.
  2. Cook the Chickpeas: Heat olive oil in a skillet, add chickpeas, smoked paprika, garlic powder, salt, and pepper. Cook until golden and crispy.
  3. Assemble the Tacos: Warm tortillas, layer with chickpeas, cabbage, avocado, green onions, and Green Goddess sauce. Top with feta and cilantro.
  4. Serve: Enjoy immediately!

Notes

  • You can substitute tofu, grilled shrimp, or roasted cauliflower for the chickpeas.
