Instructions

  1. Heat oil: Heat 1 tablespoon of olive oil in a large skillet over medium heat to prepare for sautéing the aromatics.
  2. Sauté aromatics: Add the diced onion and minced garlic to the skillet and cook until translucent, about 3 minutes, stirring occasionally to release their flavors.
  3. Cook ground beef: Increase heat to medium-high, add the ground beef and cook until browned, breaking it up into small pieces to ensure even cooking throughout.
  4. Drain fat: Carefully drain any excess fat from the skillet to reduce greasiness and improve the dish’s texture.
  5. Set aside beef: Remove the cooked ground beef mixture from the skillet and set aside temporarily to cook the vegetables.
  6. Add remaining oil: In the same skillet, add the remaining tablespoon of olive oil to prepare for cooking the sweet potatoes.
  7. Cook sweet potatoes: Add the diced sweet potatoes to the skillet and cook over medium heat for about 10 minutes until they start to soften, stirring occasionally to prevent sticking or burning.
