- 1 cup raw carrots, shredded
- 10 medjool dates, pitted and halved
- 1/2 cup raw pecans
- 1/2 cup raw walnuts
- 1/2 cup rolled oats
- 2 tbsp chia seeds

- 1/2 tsp ground ginger
- Sprinkle of sea salt

- Shredded coconut to cover
- Plain Greek yogurt (for serving)

Instructions
- Prepare the Carrots: Wash and peel 1 to 2 carrots depending on size. Roughly chop them and process in a food processor to shred finely. Transfer the shredded carrots to a large mixing bowl.
- Process the Dates and Nuts: Halve and pit the medjool dates. In the food processor, combine dates, pecans, walnuts, ground cinnamon, ground ginger, and a sprinkle of sea salt. Pulse until the nuts are broken down into tiny pieces but not completely powdery. Add this mixture to the mixing bowl with the shredded carrots.
- Combine Dry Ingredients: To the mixing bowl, add rolled oats and chia seeds. Mix all ingredients together thoroughly with a large spoon. If the mixture feels too dry or crumbly to bind, add a few tablespoons of water to help it stick.
- Form the Energy Bites: Using a spoon, scoop about 1 tablespoon of the mixture and roll it between your palms to form a ball roughly the size of a ping-pong ball. If desired, roll each ball in shredded coconut to coat.
- Chill to Set: Arrange the energy bites on a baking sheet, spaced apart to prevent sticking. Place them in the freezer for at least 30 minutes to set. These can be stored frozen for longer shelf life.
- Serve: When ready to eat, enjoy the energy bites plain or with a dollop of plain Greek yogurt and creamy peanut butter on the side for extra creaminess and protein.
