Instructions
- Preheat the Oven: Preheat your oven to 325 degrees Fahrenheit to prepare for baking the cookies.
- Combine Dry Ingredients: In a large bowl, mix together the oats, white whole wheat flour, cane sugar, and pumpkin pie spice until well combined.
- Add Wet Ingredients: Stir in the melted butter, vanilla extract, and pumpkin puree until the batter is fully combined and smooth.
- Shape the Cookies: Scoop a heaping tablespoon of batter and roll it into a ball. Place each ball on a cookie sheet and gently pat to flatten, shaping the cookies as desired. Note that these cookies will not spread much during baking.
