  • Juice of 1 lemon
  • 1 cup honey
  • 1 package pectin powder


Instructions

  1. Prepare Cherries: Clean and pit the fresh cherries, then set them aside to use in the jam.
  2. Melt Honey: Place the Instant Pot on sauté mode and add the honey. Cook until the honey is fully melted and slightly warmed.
  3. Add Jam Ingredients: Turn off the Instant Pot sauté mode, then add the pitted cherries, lemon juice, and pectin powder to the melted honey. Stir well to combine all ingredients thoroughly.
  4. Pressure Cook: Close the Instant Pot lid, seal the valve, and set it to manual high pressure for 5 minutes to cook the jam.
  5. Natural Release: After the cooking cycle ends, allow the pressure to naturally release for 8 minutes before manually releasing any remaining pressure.
  6. Cool Jam: Remove the lid, scoop the hot jam into a small bowl, and let it cool to room temperature to thicken and set properly.
  7. Seal and Store: Transfer the cooled jam into glass jars, seal tightly as directed, then store the jars in the refrigerator.
