Ingredients
Scale
Potatoes and Sausage
- 1 1/2 pounds baby red or Yukon gold potatoes, quartered
- 14 ounces smoked sausage, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1 packet ranch seasoning mix
- Salt and pepper to taste
- Nonstick cooking spray
Toppings
- 1 1/2 cups shredded cheddar cheese
- 1/4 cup sour cream
- 2 tablespoons chopped green onions or chives (optional)
Instructions
- Preheat and Prepare: Preheat your oven to 400°F and lightly grease a large baking dish or sheet pan with nonstick cooking spray to prevent sticking and allow for easy cleanup.
- Toss Potatoes: In a large bowl, combine the quartered potatoes with olive oil, ranch seasoning mix, salt, and pepper. Toss well to ensure all potato pieces are evenly coated with the seasoning and oil.
- Roast Potatoes: Spread the seasoned potatoes evenly in the prepared baking dish. Roast in the preheated oven for 20 minutes to start the cooking process and get them tender.
- Add Sausage: Remove the baking dish from the oven and add the sliced smoked sausage to the potatoes. Toss everything gently to mix the sausage with the potatoes.
- Continue Roasting: Return the dish to the oven and roast for an additional 20 to 25 minutes, or until the potatoes are tender and lightly browned, and the sausage is fully cooked through.
- Add Cheese: Remove the dish again and sprinkle the shredded cheddar cheese evenly over the top. Place back in the oven for 3 to 5 minutes until the cheese melts and becomes bubbly.
- Serve and Garnish: Drizzle the melted cheesy casserole with sour cream and sprinkle chopped green onions or chives over the top before serving for a fresh pop of flavor.
Notes
- You can substitute turkey or beef smoked sausage depending on your preference.
- For extra flavor, consider adding chopped cooked bacon before serving.
- This dish works great as a main course or a hearty side for gatherings and family dinners.
