Ingredients
Scale
Dry Ingredients
- 150g Medjool dates (pitted)
- 75g dried cranberries
- 75g roasted almonds
- 75g roasted cashews
- 50g desiccated coconut
- Pinch of sea salt
Binding Ingredients
- 1 tablespoon coconut oil (melted)
Instructions
- Prep the Tin: Line an 8×8 inch baking tin with parchment paper for easy removal of the bars later.
- Blend the Base Ingredients: In a food processor, combine the pitted Medjool dates, dried cranberries, roasted almonds, roasted cashews, and desiccated coconut. Pulse until everything is finely chopped and evenly combined, forming a coarse mixture.
- Add the Binding Ingredients: Pour in the melted coconut oil and add a pinch of sea salt. Pulse again until the mixture becomes sticky and holds together when pressed between your fingers.
- Press into the Tin: Transfer the mixture to the lined baking tin. Using a spatula or the back of a spoon, firmly press and compact the mixture evenly into the tin to create a uniform layer.
- Chill to Set: Place the tin in the refrigerator for at least 2 hours to allow the bars to firm up and set properly.
- Cut and Store: Remove from the fridge and slice into 12 bars. Store the bars in an airtight container in the refrigerator or freezer to maintain freshness.
Notes
- For a nuttier flavor, try lightly toasting the almonds and cashews before blending.
- You can substitute dried cranberries with other dried fruits like cherries or blueberries.
- Ensure dates are soft; if they are dry, soak them in warm water for 10 minutes before using.
- Store bars in the freezer for longer shelf life.
- These bars are naturally gluten-free and vegetarian.
