Description

This Irresistibly Healthy Raw Cranberry Nut bar recipe is a simple, no-bake snack combining naturally sweet Medjool dates, tart dried cranberries, and crunchy roasted nuts. Enhanced with coconut and a hint of sea salt, these bars are perfect for a nutritious energy boost or on-the-go treat. With minimal prep and no cooking required, they are great for those seeking wholesome, homemade snacks.

Ingredients

Scale

Dry Ingredients

  • 150g Medjool dates (pitted)
  • 75g dried cranberries
  • 75g roasted almonds
  • 75g roasted cashews
  • 50g desiccated coconut
  • Pinch of sea salt

Binding Ingredients

  • 1 tablespoon coconut oil (melted)

Instructions

  1. Prep the Tin: Line an 8×8 inch baking tin with parchment paper for easy removal of the bars later.
  2. Blend the Base Ingredients: In a food processor, combine the pitted Medjool dates, dried cranberries, roasted almonds, roasted cashews, and desiccated coconut. Pulse until everything is finely chopped and evenly combined, forming a coarse mixture.
  3. Add the Binding Ingredients: Pour in the melted coconut oil and add a pinch of sea salt. Pulse again until the mixture becomes sticky and holds together when pressed between your fingers.
  4. Press into the Tin: Transfer the mixture to the lined baking tin. Using a spatula or the back of a spoon, firmly press and compact the mixture evenly into the tin to create a uniform layer.
  5. Chill to Set: Place the tin in the refrigerator for at least 2 hours to allow the bars to firm up and set properly.
  6. Cut and Store: Remove from the fridge and slice into 12 bars. Store the bars in an airtight container in the refrigerator or freezer to maintain freshness.

Notes

  • For a nuttier flavor, try lightly toasting the almonds and cashews before blending.
  • You can substitute dried cranberries with other dried fruits like cherries or blueberries.
  • Ensure dates are soft; if they are dry, soak them in warm water for 10 minutes before using.
  • Store bars in the freezer for longer shelf life.
  • These bars are naturally gluten-free and vegetarian.
