Instructions

- Cool Slightly: Remove the baking sheet from the oven and let the cheese circles rest for 30–45 seconds, so they firm up enough to handle without breaking.
- Assemble Roll-Ups: On each cheese circle, layer sliced corned beef evenly, then top with about 1 tablespoon of well-drained sauerkraut.
- Roll Up: Use a spatula to carefully roll each cheese circle into a tight log, enclosing the fillings inside.
