Ingredients
Scale
Main Ingredients
- 3 tbsp butter
- 1 package mini marshmallows (approximately 10 oz)
- 6 cups Rice Krispies cereal
- 1/4 cup lime juice (freshly squeezed for best flavor)
- 1/4 tsp lime zest
- 1/2 cup white chocolate chips (optional, for drizzling)
Instructions
- Melt butter and marshmallows: In a large pot over medium heat, melt the butter and mini marshmallows together, stirring constantly until the mixture is smooth and completely melted.
- Add lime flavor: Remove the pot from heat and promptly stir in the lime juice and lime zest until fully incorporated, giving the mixture a fresh citrus punch.
- Combine with cereal: Add the Rice Krispies cereal to the pot and stir carefully to coat the cereal evenly with the marshmallow and lime mixture.
- Press mixture into pan: Transfer the coated cereal mixture into a greased 9×13-inch baking pan. Use a spatula or your hands (lightly greased or dampened) to press the mixture down firmly and evenly.
- Cool and set: Allow the mixture to cool completely at room temperature, so the treats firm up and are easier to cut.
- Optional white chocolate drizzle: If desired, melt the white chocolate chips gently and drizzle over the cooled bars for an extra layer of sweetness and decoration.
Notes
- For best zesting results, use a microplane to finely grate the lime peel, avoiding the bitter white pith.
- Press the mixture firmly into the pan to help the treats hold their shape better after cooling.
- Use fresh lime juice for the brightest and most authentic flavor.
- The white chocolate drizzle adds sweetness but can be omitted for a less sugary option.
- Store leftovers in an airtight container at room temperature for up to 3 days to maintain freshness and texture.
