Ingredients
Scale
Salmon
- 4 salmon fillets (about 6 oz each)
- 3 tbsp butter, melted
- 2 tbsp fresh lemon juice
- 1 tsp garlic powder
- 1 tsp dried parsley
- Salt and pepper, to taste
Potatoes
- 4 medium potatoes, diced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried thyme
- Salt and pepper, to taste
Broccoli
- 2 cups broccoli florets
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the potatoes, salmon, and broccoli at a consistent temperature for even cooking.
- Prepare the Potatoes: Toss the diced potatoes with olive oil, garlic powder, thyme, salt, and pepper until evenly coated. Spread them out in a single layer on a baking sheet to ensure they roast evenly and become golden and crispy. Place in the oven and roast for 25-30 minutes, flipping halfway through the cooking time for even browning.
- Prepare the Salmon: While the potatoes roast, combine melted butter, fresh lemon juice, garlic powder, dried parsley, salt, and pepper in a small bowl to create the lemon butter sauce. Place the salmon fillets on a separate baking sheet and brush them generously with the lemon butter mixture to infuse flavor and moisture.
- Roast the Salmon: After the potatoes have been cooking for 15 minutes, place the salmon fillets in the oven. Continue baking the salmon for 12-15 minutes, or until the fish is opaque and flakes easily when tested with a fork, indicating it is fully cooked.
- Prepare the Broccoli: While the salmon and potatoes cook, toss the broccoli florets with olive oil, salt, and pepper. In the last 10 minutes of the potatoes roasting, add the broccoli to the same baking sheet or to a separate sheet and return to the oven to roast until tender and slightly caramelized.
- Serve: Once everything is cooked, arrange the lemon butter salmon fillets on plates alongside the roasted potatoes and broccoli. Serve immediately to enjoy the dish warm and fresh.
Notes
- For extra crispiness, make sure to spread the potatoes in a single, even layer without crowding.
- You can substitute fresh thyme for dried thyme if preferred; use about 1 tbsp fresh thyme.
- If you like a more intense lemon flavor, add lemon zest to the butter sauce.
- Use skin-on salmon if you prefer; cook time may vary slightly.
- To save time, you can prepare the lemon butter sauce ahead and brush it on just before roasting.
