Instructions
- Prepare the Chicken: Cut each chicken breast in half lengthwise to create 4 thinner cutlets. Season both sides with salt, pepper, dried oregano, and garlic powder thoroughly to build a flavorful base.
- Cook the Chicken: Heat olive oil in a skillet over medium-high heat. When hot, add the chicken cutlets and cook for 5-6 minutes per side, or until internal temperature reaches 165°F/74°C. Once cooked, transfer the chicken to a plate, reserving any juices.
- Make the Sauce: Lower the heat to medium. Add minced garlic, white wine (or chicken broth), halved tomatoes, Kalamata olives, and drained capers to the same skillet. Cook for 3-4 minutes until the tomatoes begin to soften and slightly break down, creating a light sauce. Add a splash of broth if the sauce looks too reduced.
- Finish the Dish: Stir fresh baby spinach and crumbled feta cheese into the sauce. Return the cooked chicken and any accumulated juices to the skillet and warm everything together for 1-2 minutes until spinach wilts and flavors meld. Adjust seasoning with salt and pepper if needed. Serve immediately.
