French Toast Batter
- 2 eggs
- 2 tbsp milk (full or low fat)

- 10 slices of baguette (French stick), around 2 1/5″ / 3cm thick
- Maple syrup (not optional!)
- Confectioners sugar (icing sugar), for dusting (optional)
Instructions
- Macerate the Strawberries: Combine the sliced strawberries with 2 teaspoons of white sugar in a bowl and set aside. Allow the strawberries to sit so they release their natural juices, forming a lightly sweet syrup.
- Prepare the Egg Mixture: In a shallow bowl, lightly whisk together the eggs, milk, and a pinch of salt until well combined to create the French toast batter.
- Melt the Butter: Heat 1 to 2 tablespoons of unsalted butter in a large frying pan over medium-high heat until melted and slightly bubbling but not burnt.
- Dip and Fry the Bread: Dip each baguette slice into the egg mixture, allowing it to soak for about 3 seconds per side. Then place the soaked slices in the hot pan and fry each side for approximately 2 and a half minutes, or until golden brown and crispy.
- Serve: Remove the French toast from the pan and arrange on serving plates. Top generously with the macerated strawberries and their syrup, drizzle with maple syrup, and optionally dust with confectioners sugar. Add extra fresh strawberries if desired.
